Radicchio, Fennel and Olive Panzanella
serves 4
Ingredients
- 6 oz country-style bread, bite-size pieces
- 1 T lemon zest, fine grate
- 1/2 C olive oil
- 1 ea shallot, fine chop
- 2 T lemon juice
- 2 T red wine vinegar
- 1 T fresh oregano, chopped
- 1 hd radicchio, bite-size pieces
- 1 hd fennel, thin slice
- 1 C fresh parsley leaves
- 1/2 C green olives, pitted and halved
- 3 oz Manchego cheese
- 3 oz hard salami, thinly sliced
Instructions
- Toss the bread with the lemon and 1/4C oil, salt and pepper, then bake at 400 until crisp but chewy.
- Whisk together the lemon juice, olive oil, vinegar, shallot and oregano, then season to taste.
- Toss the radicchio, fennel, parsley, olives, cheese, salami and bread in the dressing.
- Plate and serve chilled.
