Radicchio, Fennel and Olive Panzanella

Ingredients

Instructions

  1. Toss the bread with the lemon and 1/4C oil, salt and pepper, then bake at 400 until crisp but chewy.
  2. Whisk together the lemon juice, olive oil, vinegar, shallot and oregano, then season to taste.
  3. Toss the radicchio, fennel, parsley, olives, cheese, salami and bread in the dressing.
  4. Plate and serve chilled.
